Making beef stew question?

This is my first time making stew. I browned the meat after coated it in flour for about 2 minutes each half pound. Im not sure if i browned it enough it was like light brown and you could still see some red in some of the pieces. I just didn't wanna cook it too long so it doesn't turn hard and chewy. My recipe asks for 2 and a half cups of veggie juice, doesn't say anything about water. I added 3 cups. Now im not sure but should a add more juice as it cooks , or water? I just don't wanna mess it up or change the flavor... Im cooking in in the crock pot on high for 2 hours and low for like 5...
